Fresh from FloridaThe Florida cucumber is a refreshingly crisp and bright vegetable grown in abundance on farms in South and Central Florida. It is a member of the cucurbit family, which includes cantaloupes, honeydew melons and squashes. Florida was the nation’s leader in cucumber production for fresh market in 2007, valued at $72 million. Florida’s cucumber crop is available October through June.

Hydrating, refreshing and low in calories, the Florida cucumber is roughly 95 percent water. Cucumbers are cholesterol-, sodium- and fat-free. They are a source of vitamins A and C, as well as potassium and fiber. When shopping, look for firm, dark-green cucumbers with firm, rounded ends. They should be free of soft spots, bruises and yellowing. Avoid cucumbers that bulge in the middle, as they have more seeds and are often bland. Store your Florida cucumber unwashed and uncut in the refrigerator crisper for up to a week. For optimal freshness, do not store with fruits and vegetables that produce ethylene gas, such as tomatoes, apples or peaches.

Florida cucumbers can add gorgeous color and a burst of flavor to many dishes, from pickles to salads and sandwiches. They are extremely versatile and delicious. Give these “cool” Florida cucumber recipes a try.


Florida Cucumber Dip with AvocadoFLORIDA CUCUMBER AND MANGO SALAD WITH PEANUTS

2 medium Florida cucumbers, peeled, seeded, cut into small pieces
Juice of one large lime
1⁄2 cup red onions, finely chopped
1⁄2 cup fresh cilantro, finely chopped
1⁄2 cup Florida mango, peeled and cubed
1⁄4 tsp kosher salt
2⁄3 cup Florida peanuts, coarsely chopped
(A French-style mandoline can be used to cut the cucumber and mango into long strings. If one is not available, follow the directions above.)

Mix everything but the peanuts together. Add half the peanuts and mix well. Sprinkle the rest of the peanuts on top of the salad before you serve. This is a great side dish for fish.

FLORIDA CUCUMBER DIP WITH AVOCADO

1 Florida tomato
2 Florida cucumbers
2 cups lite sour cream
1 tablespoon Italian seasoning (or your favorite—any kind will work)
1 Florida avocado, peeled and diced

Peel, seed and dice tomato. Peel, split lengthwise, seed and dice cucumbers. Thoroughly drain all liquid from tomato and cucumbers. Mix all the ingredients and chill before serving. Serve with your favorite chips or fresh Florida vegetables.Palm Tree
